Herb of the Day: Garlic~ Good for more than keeping away Dracula!
Nothing smells or tastes quite like garlic. Cooks like it for its flavor and you’ll find garlic in culinary preparations from around the world. Garlic is full of health benefits which can be received either through consuming the garlic in food or using the garlic in herbal preparations. Full of lore with stories of keeping away vampires, garlic is often found in popular culture as well. It can be consumed in food, powder, oil, made in to extracts or tinctures, used topically or as a prophylactic. Many people who are consuming garlic internally will use enteric coated capsules which help the garlic to break down in the proper part of the digestive tract and don’t irritate the throat.

Garlic, Allium sativum, is found worldwide and happens to be extremely easy to grow. Garlic is a slow-growing plant which can take months to fully mature. A single clove can be planted in some soil, watered regularly, and given adequate sun exposure and it will grow a full head of garlic. Generally, garlic is planted in the Spring and harvested in fall. In early summer tender green garlic (aka garlic scapes) will begin growing from the plant. These are delicious and full of nutritional benefits as well, they also have a much more mild flavor than a garlic bulb. Cutting these scapes will let the plant focus more energy on growing a bigger, heartier bulb of garlic. Harvest garlic when the tops begin to dry up. Garlic is then dried and can be stored for quite a long time.
